FOOD CORNER: FEATURING RECIPES AND NUTRITIONAL TIPS THAT PROMOTE A LONG AND HEALTHY LIFE

This page is designed to offer practical and easy tips and recipes for people who want to lose weight and/or optimize their health. Our goal is to improve your overall health through dietary measures and lifestyle modifications. Please feel free to add your comments, recipes, and tips. Recipes should include healthy food options that will nourish your body and mind.
RECIPES:
1. Salsa, so nutritious and delicious, and best yet, so easy to make:
  • Tomatoes (red or yellow, or both), diced,
  • Onion (color of your choice- Vidalas will lend a "sweeter" taste, the white and red ones will lend a "sharper" taste),              
  • Cilantro, coarsely chopped,
  • Juice of one lime, squeezed,
  • "Hot" element: I use Sriracha sauce, but have also used jalapenos,        
          completely your choice and add to              desired level of "hotness,"
  • Splash of vinegar (white or apple cider both work), and
  • Salt and Pepper
    **Eat as is, or blend for 10 seconds to make a more "soupy" salsa. No matter 
how you prep it, it's delicious (and nutritious) every time! 

2. Modern, not your Mom's potato salad, with an Italian twist:
  • Potatoes (your choice- white, red, yellow); peeled, chopped, and boiled. You'll want to prepare them in this order...trust me, it will make your life much easier,
  • Onion, diced (your choice- red, yellow or white...I prefer red),
  • Tomatoes, diced,
  • Avocado (blended as mayonnaise  substitute), or minimal Olive Oil, and
  • Basil, chopped (fresh is ALWAYS better),
    -Optional add ins: Celery, Italian seasoning mix, Rosemary, Thyme
    **Stir, refrigerate, and enjoy. I dare you not to eat the WHOLE bowl! 

3. Avocado, Blended
  • 1 large avocado, pitted and blended (Nutribullet or high powered Blender)
  • Salt and pepper to taste

4. Homemade Tomato Sauce: To be used as a Pasta sauce, Pizza sauce or 
Focaccia Bread...the possibilities are endless.
  • Tomatoes, lots of them! You can use any variety, I prefer the small, cherry tomatoes as they lend a "sweeter" taste to the sauce. Roughly chop the tomatoes (no need to chop if you are using cherry tomatoes, yet another reason to use them!; I reserve 1/4 of tomatoes and blend them to make the sauce base,
  • Olive oil (Organic ideal), 4-5 tablespoons,
  • Fresh Basil, chopped,
  • 4-5 Cloves of Garlic, finely chopped or minced, and
  • Optional: onions, Italian seasoning.
    **Preparation: Heat the oil, garlic, and onions if you're adding them in large 
skillet on medium heat. Add the tomatoes and tomato blend, bring to a boil.
Turn heat to low and simmer for 3-4 hours. Cook until the consistency you desire is reached. If you're so inclined, can the sauce and enjoy later. This sauce is SO delicious, even my dog loves it...I mix it in with his steak, and voila...spaghetti steak! 

5. Vegan Chili: Perfect for Cold Nights! I make mine in a slow cooker!

Ingredients: 
  • 3 Garlic cloves, diced
  • 1 Medium Yellow Onion, diced
  • 1 can (15 0z) Organic Kidney Beans 
  • 1 can (15 oz) Organic Chickpeas
  • 1 can (15 ozO Organic Black Beans
  • 32 oz Stewed tomatoes
  • 2 Tbsp Chili Powder
  • 1.5 Tbsp Himalayan Salt
  • 1 Tbsp Ground Cumin
  • 1-2 Jalapeno Peppers (seeded, diced)
  • Cilantro (as topping, Optional)
September-November: Canning and Dehydrating Produce as we gear up for a New England winter.
Summer is fun and we have the luxury of great local, fresh, produce but unfortunately this is seasonal and as winter approaches, this bountiful produce (variety and amounts) will soon end. It's time to can and dehydrate your fruits and veggies...that way you will still get the delicious and nutritious foods that are essential to your immune system and overall well-being
